Universal noodles, cut with blade #22, are known as medium-thick noodles. This ideal thickness allows for excellent broth absorption, making them perfect for any ramen dish. These medium-thick noodles have a pleasant chewiness that provides a satisfying texture with every bite. Despite their firmness, they maintain their shape even after absorbing broth, enhancing the overall flavor. Cooking Instructions
- Boil Water: Boil a generous amount of water for cooking noodles.
- Preparation: Before cooking, thoroughly loosen the noodles.
- The usual cooking time for this type of noodles is about 90 seconds. Once the noodles are cooked, drain well and quickly put into broth.
- For tsukemen or hiyashi chuka (cold noodles), cook the noodles for about 120 seconds. After cooking, rinse the noodles thoroughly with cold water and drain them well before serving.
