Ingredients

  • 2 lbs Pork Shoulder


Soup Base

  • 2 cups of Water
  • 2 cups of Soy Sauce
  • 2 cups of Mirin (Sweet Rice Wine)

 

Instructions


1) Cut the meat into a block shape.

2) Place the pork with the sauce base in a pot, and turn on the stove.

3) Cook on medium heat until internal temperature is 158 ̊F or 70 ̊C. Turn heat off.

4) Cool the meat down, then leave it in with the sauce for 12 hours in the refrigerator.

5) Remove the pork from the sauce, and slice it.

6) Pan-fry or torch your chashu slices before serving for extra aroma.
